Sponge cake

Fragrance notes of sponge cake (often described as ‘cake batter’, ‘vanilla sponge’ or ‘lemon pound cake’ in English) are popular in gourmand perfumes for their warm, nostalgic and sweet character. 

Sponge cake as a fragrance ingredient is often based on vanilla, sugar and butter, which lend warmth and sweetness to a perfume, as well as a dry, crumbly and freshly baked character. A classic sponge cake often has a hint of lemon, which provides a fresh yet sweet top note. If the sponge cake is toasted or made with brown sugar, it may smell of caramel.
